They are available in different sizes as the auditory canals in humans are never the same size. It is important that the entire plug is introduced into the auditory canal so that it attenuates the noise optimally. If you choose a soft plug that that has to be rolled before being inserted, be careful with your hygiene so that dirt from the fingers doesn't enter the ear.
